Piratical Pumpkin (P)soup

Ingredients
- 1 medium pumpkin, chopped into smallish cubes
- 1 medium onion, finely chopped
- 1 chunk of root ginger (1 1/4" or so), peeled and finely chopped
- 1 generous tsp cumin seeds
- 3/4 pint veg. stock
- 1 generous glug of rum
- Olive oil
Method
- Gently cook onion in oil until transparent. Add cumin and ginger and cook a little longer to release the flavours.
- Add the pumpkin and stock. Simmer until pumpkin is tender.
- Mash pumpkin. (I did this with with the pan on the stove still cooking away.) Simmer until required.
- Serve with a swirl of rum in each bowl.
Now I shan't forget what I did 'cos I've got it written down and posted--twice. Must remember to tag it for future recall since we have just reached the season of squashes in veg boxes.
