It wasn't raining this morning, so I went and foraged for a peck (how big is a peck?) of plums. Highly dangerous, due to the sloppy cowpats and rotting windfalls underfoot and the constant rain of little yellow "plums" from above.

Ingredients

  • 1 medium pumpkin, chopped into smallish cubes
  • 1 medium onion, finely chopped
  • 1 chunk of root ginger (1 1/4" or so), peeled and finely chopped
  • 1 generous tsp cumin seeds
  • 3/4 pint veg. stock
  • 1 generous glug of rum
  • Olive oil

Method

  1. Gently cook onion in oil until transparent. Add cumin and ginger and cook a little longer to release the flavours.
  2. Add the pumpkin and stock. Simmer until pumpkin is tender.
  3. Mash pumpkin. (I did this with with the pan on the stove still cooking away.) Simmer until required.
  4. Serve with a swirl of rum in each bowl.

Now I shan't forget what I did 'cos I've got it written down and posted--twice. Must remember to tag it for future recall since we have just reached the season of squashes in veg boxes.
